A knife made from high carbon steel can be hardened to HRC 59-60, which gives the best possible sharpness for the lowest price. However, this will not have a negative impact on edge quality. On the contrary, it will slightly improve corrosion resistance. To prevent corrosion, make sure the knife is clean and dry. If you want the best corrosion resistance, apply a thin layer of oil to the blade as soon as possible.
